Most of us know that feeling of dread when you come in at the end of the day and realise that you haven’t thought about food yet, and that a meal needs to be on the table in an hour or two and you don’t have anything in the house. Often, this leads people to dash out and pick up something ready made, or to order some kind of fast food delivery. This is usually a less healthy option than cooking yourself, and it’s almost always more expensive.
So how do you avoid falling into this trap? Simple; you keep your kitchen cupboards well stocked. This will save you spending on emergency meals when you haven’t had time to think about what to cook, and will save you the time and trouble that comes with worrying about what you’ve got in the fridge and whether it can make a meal.
Of course, you don’t want to buy things that you’re never likely to use, or that you use so rarely that they won’t be good anymore by the time you get round to them. Make sure to buy sensibly; when you’re about to pick something off the shelf, or move it into your online trolley, stop for a second and think how useful it is before buying it.
There are plenty of things that are great to have in stock, though. Frozen meat generally comes cheaper than fresh to start with, and is an excellent addition to your supplies. It can form the basis of a meal whenever you need it – and since beef and lamb can be stored frozen for up to a year, and pork and chicken for up to 6 months, once you’ve got it in the freezer you know you’re set for some time.
Frozen vegetables are also handy to have around; they’re quick to cook – some can even be microwaved – and count as part of your 5 A DAY, just as fresh veg does. Whether it’s broccoli, cauliflower, green beans or anything else, make sure to have whatever your kids like best in your freezer, ready to be pulled out whenever you realise you need it.
Tins are also your friends, as they’re long-lasting and can wait until you discover you need them. Many vegetables come tinned, such as corn or mushrooms, while tinned tomatoes can be the basis of a delicious sauce to go on pasta or with meat. Soups also come in tins, of course, which can be useful when you want more of a warm snack than a meal.
Another great thing to have in the cupboard is tinned fruit. Many can be eaten by themselves – particularly if you include the juice from the tin, it’s amazing how quickly children will polish off a tin of pears or peaches – but they’re also good with cream, or as part of a quick crumble or pie.

 Families up and down the country have been counting down the days for some time by now, all waiting for the beginning of the 2010 World Cup.  It’s getting to the time of year when you might be feeling like something a bit lighter in the evenings, or perhaps you just feel like a bit of a change. If that’s the case, you might want to consider branching out into other cuisines. Try the tastes of Mexican food, and improvise your own variations to match what your family likes best.
It’s unlikely you’ll want to keep to the very authentic menu – favourite foods in Mexico include some things that are rather unusual here, such as ostrich meat, iguana and goat in a spicy tomato sauce! But there are plenty of other options that are more likely to tempt British tastebuds.
One way to make the meal easy and fun is by basing it around tortillas, which can be used to wrap the food up in a neat package, or eaten open with food piled on top of them, or even used to scoop up different foods, almost as you might use bread to mop up soup. This also means that you can simply put a variety of things out on the table and let everyone choose their own fillings, so that they’re all happy!
Corn and beans are both Mexican cuisine staples, so you can add either of these in any way you want, from corn on the cob to beans from a tin. Baked beans aren’t exactly traditional, but it’s common for cuisines to become adapted to new countries when they go international and Mexican food is no exception to this fusion rule – so if that’s what your kids are clamouring for, give it to them!
Tomatoes are also regularly used in Mexico, and can add a nice fresh note to the meal – serve them simply sliced, or with basil or olive oil, or crushed into a kind of salsa. Experiment until you find what your family likes the best. You can also add garlic – crushed, sliced or roasted – to add a bit more flavour to the meal.
Feel free to add your own variations on the theme – if you all love avocados, add those in. If you prefer fish to a more traditional beef, use sliced tuna steak. Add mangoes or parsley if you want – the idea is to make sure you’re all enjoying yourselves.
Honey is a popular sweet treat in Mexico, and there are a number of ways to include this as dessert options. You can use it to drizzle over fresh or cooked fruit, add it to oats and nuts to make delicious (if sticky) honey balls, or use it when making ginger biscuits or honey cake.
Of course, one other thing that everyone associates with Mexico is chocolate, because the cacao beans grown in the region are an essential ingredient in making chocolate. So, if you’re looking to spoil your family at the end of the meal but don’t want to get too unhealthy, melt some chocolate and pour it over fruit. You can eat it whilst the sauce is still hot, or wait for it to cool and form a coating; either way, you’ll be helping your kids get their 5 A DAY and limiting the amount of chocolate you actually consume.

 Who wants pizza? There’s a good chance that if you ask this question and your kids are in the room, there will be shouts of delight. Pizza is a well-loved treat for adults and children alike. But how often do you make precisely the kind of pizza you want?
There are many different ways of getting this favourite meal to a hungry family. Perhaps the first thought is of ordering in and getting it delivered. Then, you can pick your toppings, though usually only to a point, depending on what’s available. This is fun and hassle-free, but it can get expensive, particularly if you’re ordering for more than one or two people.
A cheaper way to do things is to pick up a pizza during your weekly shop. You can buy it fresh to eat right away, or frozen for later. This is a great thing to have in the freezer, as it turns quickly and easily into a meal when it’s popped into the oven. You can buy them already prepared with various flavours and toppings, but sometimes the best thing to do is get a simple margherita pizza, without anything – and then add whatever you want when you’re ready to bake it!
Alternatively, you can buy a pizza base, without anything on it yet, and build everything up from there, even making your own tomato sauce if you want, or adding herbs to the mixture before topping it with cheese.
Adding your own toppings means that you really can personalise; you can bring out anything that you think will be great on pizza. You can even divide areas of the pizza for different family members, in case your partner’s conviction that chilli goes well on everything doesn’t convince you or your tastebuds.
Be creative, and give your kids (relatively) free rein. Sausages, peppers, tomatoes, mushrooms, anchovies and so on are all well known. But what about pineapple or tuna? Or some pre-cooked things you have in the fridge from a previous night – such as boiled egg or sweet potato? You can also add more tomato paste if you feel like it, or more cheese – and even try unusual cheeses like blue cheese or goat’s cheese.
If you have a breadmaker, you can easily make the dough for the pizza yourself and really do everything from scratch, such as making whole-wheat base if you prefer. You can also experiment with personal-sized pizzas, giving everyone a base to add ingredients to as they like.

 Now that the weather has turned warmer, there can be an expectation that we ought to be moving towards summer food already – you might be thinking about what condition you left the barbeque in last year, or where you put that picnic blanket. Whilst it’s definitely worth enjoying the warm days when they come, the nights at this time of year are often chilly. When that’s the case, there’s nothing better than a hot bowl of soup to warm you up!
Soups make great meals for lots of reasons – they’re good for your tastebuds, and for your wallet too. They’re inexpensive to make, and you can make one on the spur of the moment, using whatever vegetables or meat needs eating from the fridge – meaning that those ingredients don’t go to waste. Plus, many soups contain vegetables, and sometimes fruits, meaning that they can contribute to your 5 A DAY.
Broth style soups are perhaps the easiest of all to prepare. You simply put all the ingredients you’ve chosen in the pot, bring it to the boil, and then simmer for a while. You can use chicken – breast, leg, even neck, whatever you have – for chicken soup, beef to make beef stock and so on. You can add a range of vegetables – root vegetables such as turnip, swede or parsnip are tasty, and often add a sweet taste to the mixture, onions are a useful staple, and even more unusual veg such as celery or courgette can be winners in soup. Pick whatever you’ve got! Then just add water and some stock cubes, and you’re all set.
Thicker vegetable soups are also delicious, and almost as easy to make. There are lots of different recipes, so experiment with mixed vegetables, or see what you can do with whatever veg your family prefers, be it mushroom, carrot (which is great with coriander), tomato or onion. You can thicken with milk or drizzle on some cream before serving.
You can add carbohydrates such as potatoes or rice directly to the soup as it’s on the hob, letting them cook along with the soup, or you can serve a side dish of fresh bread and butter for everyone to dig into (an advantage of this option being that you can use the bread to scoop up the remaining soup!).
For warmer evenings, or for later in the year, cold soups can also be a nice treat. Spicy gazpacho, creamy avocado or broccoli, refreshing cucumber or tomato and basil, or sweet strawberry, melon or tangy pineapple – there are so many possibilities out there that you’re bound to find something that suits your mood and your family’s eating preferences.

Now that May has begun, we really are firmly into the spring season – and this is reflected in the kinds of foods that are at their best in the supermarkets. Take advantage of a little seasonal knowledge to get the tastiest treats and freshest groceries.

 Does your family get enough milk? We all want our children to grow up healthy and strong, and making sure that they get enough milk in their diet can be an important part of that. It’s good for adults, too – it contains calcium and protein that we all need.
Drinking cow’s milk is particularly vital for pregnant mums, who should try to incorporate a glass a day into their meals – the goodness in the milk gets transferred to the baby, and the calcium in particular will help develop strong bones and avoid the development of brittle bones – something that is important when they get older and can drink milk themselves.
Of course, making milk part of your and your family’s diet doesn’t have to mean sitting everyone down with a glass every day. There are lots of other ways to include it in meals without it becoming boring.
For one thing, there are many kinds of flavoured milks on offer, from chocolate to vanilla to strawberry. You can buy these ready-made, or buy something like Nesquik to add the flavour to ordinary milk. These might help persuade your little ones that milk really is a fun element of a menu.
Milk is a common addition to cereal in the mornings, but if possible it’s preferable to try and get it some other way as well, as we don’t usually add that much to cereal. Most people don’t like their breakfast to be swimming in milk! Yoghurt can be another easy breakfast option which is also primarily milk-based, and comes in all sorts of flavours. It can have fruits and nuts added to make it more varied as well.
Cheese sandwiches, or cream cheese, are also milk-based products, so you can add milk into your diet at lunch time as well. If your kids prefer melted cheese, you can give it to them on toast or with pasta – the important thing is that they’re getting the calcium and protein that all milk-based products contain.
You can also make milky treats such as cheesecakes, or serve strawberries with cream. It isn’t recommended to have quite as much of these however, as they’re not as healthy as a glass of milk or a bowl of cereal. Still, they help to get milk into your diet and teach your children that including milk in their diet can be fun.

 Do you celebrate St. George’s Day? You’ve definitely seen the flag of St. George, with its red cross on a white background, and maybe even waved it at a football match or hung it out of your window. You can add other old staples such as Yorkshire puddings, roast potatoes, and even brussel sprouts – maybe you can get the kids to eat them by telling them that St. George always ate his vegetables!
If you’re not in the mood for meat, there’s nothing more English than good old fish and chips, so give your family a treat with a meal everyone loves. It’s a good idea to add vegetables such as spinach or salad, though, to make sure you’re contributing towards your 5 A DAY.
There are a number of flexible options as well, from pasties to pies. These can be filled with mince, or pieces of meat, but they can just as easily be made with vegetables, so you can enjoy yourselves just as much with mushroom pasties or a sweet potato pie.
Top it all off with a national dessert, such as trifle, Victoria Sponge, sticky toffee pudding, or one of a range of fruit or nut pies. We are a nation with a bit of a sweet tooth, so there’s lots to choose from!
It’s also worth remembering that England has been influenced by many different and delicious cuisines over the years, so if what your family really wants is curry and rice, you can let them have it and celebrate the variety of recipes in England today.

 Watch out and beware, because this Thursday is the 1st of April – otherwise known as April Fools’ Day! If you don’t know that it’s happening, your kids probably do, so here are some ways to join in the fun, and maybe even give them a few surprises during the day.
The origins of April Fools’ Day are obscure, as you’d expect from a holiday that is all about disguise and trickery, but many different cultures all around the world celebrated a lighthearted festival of fun and nonsense at around this time of year, and more recently the tradition has spread far and wide. In the U.K., we generally stop the pranks at midday – anyone who plays one afterwards is called an April Fool – but in many other countries the pranks go on all day long, so if your kids are disappointed about being in school for most of the day you can always adopt the U.S. custom, or pretend that you’re in France, Russia, or one of the other countries that keep the fun going all day.
One of the common tricks on April Fools’ Day centres around food – making dishes that look like one thing, but are really something else. Shepherd’s pie, for example, can be made in a round dish, with the potato smoothed over on top and round the sides, so that it looks like an iced cake. You can even add cherries for the full effect! Or try serving cauliflower soup with round croutons so that it looks like cereal and milk.
If you’re only fooling around the first half of the day, there are still lots of fun things you can do. Morning eggs, for instance, can be a sweet surprise if you make them out of melted white chocolate and a yellow sweet or two, such as M&Ms, or perhaps marshmallows and dried apricots, while ‘bacon’ can be disguised chocolates or biscuits. If your kids take packed lunch to school, you can add some special silliness to it by wriggling a gummy worm into their apple, or switching around the contents of the packages so they never quite know what they’re going to find!
You can also make eating food difficult or silly in some special way – like trying to eat everything with chopsticks, or having to eat your chips with your hands behind your back. Alternatively, you can try putting foods into containers you wouldn’t usually eat them out of; say, putting part of your main course into mugs, or drinking out of bowls. It can get a little messy at times, so that’s something to be prepared for, but it can be a great, fun time for all the family.

 It’s Easter once again, and while this means many different things – holidays, church, chocolate, to name but a few – it also means that it’s time for Easter egg hunts!
The Easter egg hunt is a traditional Easter activity that usually happens on Easter Sunday, though it’s not uncommon to arrange it as a weekend activity on the Saturday if that suits your plans better. The idea is that the Easter Bunny has hidden eggs and other treats around a particular area, and the purpose of the hunt is to find all of them and enjoy them!
Traditionally, the hunt takes place outside, but it’s probably sensible to have a rainy-day plan in mind, just in case the weather doesn’t cooperate.
One of the challenges of organising the Easter egg hunt is choosing the right prizes. It will depend a bit on the age of your participants – if you have some helpful teenagers willing to help the toddlers, you might want to make sure that there are some treats suitable for them, too. (They can always trade with younger hunters if the prizes get mixed.)
In general, though, it’s safe to stick to the sorts of things everyone enjoys. Chocolate eggs, chocolate bars or cheerfully wrapped chocolates like Quality Street or Roses are always popular. Sweets are also good – but make sure that they’re the individually wrapped kind, as otherwise everyone will get very sticky!
There’s nothing wrong with including some healthier options in your hunt – children may be surprised by how much they enjoy dried apricots or raisins.
Home-baked goods are also a possibility – you can make biscuits in bunny shapes, or cupcakes with frosting that looks like eggs. Just remember to wrap them up in cling film or put them in plastic bags before you put them out for the hunt!
The main thing is to have a good time, so consider getting some happy music to play during the hunt, or preparing clues to hiding places that relate to shared jokes. And after a hard morning’s hunt, you can all retire to rest and eat together.
